Cook Guanmiao noodles in boiling water over medium heat for 7 minutes. Drain, put the noodles in a baking tray and set aside.
Heat oil in a pan over medium heat. Stir-fry the bacon, mushrooms and onions until fragrant, then add spinach and all seasonings (except flour) and bring to boil.
Add the flour gradually, cook the cream sauce over low heat until thickened. Pour the sauce over the noodles.
Sprinkle with cheese and put the abalones on top of the noodles, then bake at 200°C for 5 minutes until the surface turns golden.
Tips: Mix and match with your favourite ingredients, such as asparagus to enhance the taste.
