Boil the dry sheet jelly according to the instructions on the package. Soak in cold water. Drain and dry.
Marinate the chicken with soy sauce and sugar. Steam the chicken over medium heat for 8 minutes until it is cooked through. Shred into stripes. Blanch the Vietnamese sausage and set aside.
Mix Premium Soy Sauce with red vinegar.
Place the sheet jelly onto a plate. Top with shredded chicken, sausage and, cucumber, then drizzle with the Dan Dan sauce and sprinkle with roasted sesame.
Tips: Rinse the sheet jelly with cold water to prevent it from sticking together.
