How to make it

  1. Heat the wok with oil, stir-fry the onions, bell peppers and corn until fragrant.
    Add beaten eggs and stir-fry slightly.  
    Add rice and stir-fry over low heat until the grains are distinct and well-separated.
  2. Add eel and seasoning to the fried rice. stir-fry over medium heat evenly.
  3. Add green onion, stir-fry over high heat until fragrant. Sprinkle with crab roe as garnish and serve.

     

    Tips:

    Pay attention to the strength of heat produced when stir-frying the rice:
    stir-fry the ingredients over medium heat;
    stir-fry the rice over low heat to prevent burning,
    and eventually turning up to high heat can bring out more flavour .
