Heat oil in wok again, stir fry the shredded meat until fragrant. Add shiitake mushrooms, carrots, tofu and seasonings, simmer until all ingredients are cooked. Put the Choy Sum on the side of the dish and serve. Garnish with chopped spring onion.
Tips
Drying the tofu first can prevent oil splashing when cooking.
Pan-fry the tofu until one side becomes golden brown, and then flip to another side. Thus, the tofu will not be broken up easily.
Use Lee Kum Kee Vegetarian Oyster Flavoured Sauce as marinade can lift up the flavour of the vegetarian meat.
