Blanch semi-dried oysters in boiling water. Drain.
Mix minced pork with marinade.
Saute minced garlic and shallot in 2 tbsp oil. Add minced pork, semi-dried oysters and stir-fry until fragrant.
Add corn, carrots and water chestnuts. Stir-fry for about 1 minute. Stir in sauce mix. Stir well until heated through. Sprinkle with pine nuts. Wrap filling with lettuce leaves to serve.
