Bring a pot of water to a boil, add the eggs, and simmer for 7 and a half minutes. Remove the eggs from the pot and place them in ice water to cool.
Cook the shrimp until pink and opaque, cut them in half, and set them aside. Slice the avocado and set it aside.
Spread Seafood XO sauce onto each slice of bread, add the shrimp and avocado slices, place a soft-boiled egg in the center, and cut the sandwich into a rectangular shape.
