Braised Eggplant Minced Pork and Glass Noodle with Seafood XO Sauce in Casserole
What You Will Need
Ingredients
- Eggplant 600 g (Cut into thick strips)
- Minced Pork 200 g
- Glass Noodle 100 g
- Garlic 1/2 tsp
- Green Onion 10 g (Diced)
- Water 50 mL
- Chilli a handful (Diced)
Marinade
- Lee Kum Kee Premium Oyster Sauce 2 tsp
Seasoning
- Lee Kum Kee Seafood XO Sauce 3 tsp

How to make it

Marinade minced pork with marinade for 20 minutes. Soak the glass noodles until soft. Drain and set aside.

Sauté garlic with 1/2 tbsp oil, add minced pork until completely cooked. Then, add eggplant and mix well. Add water to braise for 5 minutes.

Add glass noodles and seasoning until the sauce has reduced. Add diced chilli and green onion, ready to serve.
